- 1Â English cucumber or 2-3 small lemon cucumbers
- 8 basil leaves
- 1/2 oz fresh lime juice
- 1/2 oz simple syrup
- 2 oz gin
Peel the cucumbers. Chop into chunks. Discard the peels. Â Combine the basil, cucumber, lime, and simple syrup in a cocktail shaker. Muddle thoroughly. Â Add ice and gin. Â Close the cocktail shaker and shake until you start to see frost on the outside of the shaker. Drain the drink into a glass.
- Fill a Collins glass, rocks glass, or sturdy wine glass with ice.Â
- Pour the Aperol over the ice, then gently pour the Prosecco down the side of the glass, taking care not to let it fizz up too much.Â
- Fill with soda to taste.
